Double clicking is already used for selecting a word. If you really like this feature, make it optional.

Yes, but it will be so much better to add tags just in two clicks instead of four steps:
1.(2 clicks) +
2.(Ctrl+C) +
3.(focus) +
4.(Ctrl+V)

What if CN would support drag&drop? That is double click the word and drag it to the tags field?

Adding words as tags on double click would surely confuse users. I think the best way would be just to add a context menu item "Add as tag".Drag-and-drop is a good idea as well, albeit a bit more difficult implementation-wise.
